THE FIX The prospect of a soggy bottom haunts every baker.


A secret ingredient, which Stacey Mei Yan Fong, author of the cook-
book 50 Pies, 50 States, calls “crust dust,” can keep it at bay. “Before
adding the filling, sprinkle the surface of the crust with a teaspoon
each of sugar and flour. Or try panko,” she says. This creates a thin
barrier that protects your crust from the wet filling without impact-
ing flavor. Using the right pie pan can also help. While she still
bakes in ceramic sometimes, Erin Jeanne McDowell, author of
The Book on Pie and Savory Baking, says that metal is her favorite
for even baking. “Plus, it’s the most nonstick, which makes the
pie easier to slice.” She suggests skipping glass. “I find people have T H E P RO B L E M
the most crust problems using that type of pie pan.” My fruit filling is too
watery—or pasty.

and baking the pie.” This step helps
reduce some of the juice, so the filling
is less liquidy. When dealing with
juicier fruit—like cranberries and
other berries—Broussard relies on an
old standby to thicken things up:
cornstarch. She simmers the fruit in
a saucepan until it’s nice and saucy.

chilling before baking, McDowell says. “Refrigerate your
filled pie—or just the pie shell if you’re parbaking (partially
baking) or blind baking (fully baking) the crust before

butter won’t immediately melt in the oven, giving the crust
a chance to preserve its shape. Another key is adding
enough filling. “If the sides aren’t well supported in the

par- or blind baking, and choosing the right pie pan
for the amount of filling.” In other words, don’t
make a standard-size pie in a deep-dish pan.

old, and for dogs it’s around 8 to 11,

of certain illnesses and conditions—
particularly cancer, cognitive dysfunc-
tion, and arthritis—can be diagnosed
ASAP through blood work, urinalysis,

1 1-oz. pkg. taco seasoning mix
(such as McCormick)
4 6-in. flour tortillas
1/3 cup chopped fresh avocado
(from 1 avocado)
1/4 cup pico de gallo, drained

STIR together mayonnaise, 11/2

in a small bowl until well combined.
GENTLY combine beef and taco sea-
soning in a large bowl. Divide beef
mixture into 4 equal portions. Press
each portion into a thin patty over

HEAT a large nonstick skillet over
medium-high. Add 1 tortilla, beef
side down; cook, pressing down
gently, until well browned, 2 to 3

1 Tbsp. plus 1/4 tsp. Dijon
mustard, divided
21/2 cups chopped rotisserie
chicken (from 1 small
rotisserie chicken)
1/3 cup chopped fresh shallot
(from 1 shallot)
4 cups baby kale

PREHEAT oven to 450°F. Stir
